You've not counted in "magic space", TimeTurners, and such, which could throw a monkey wrench into the whole deal.
And then... RW teachers spend around 60+ hours per week working/doing class-related planning and such, at least the good ones do.
re: 1. The amount of students isn't necessarily constant with JKR's. There's been a pretty devastaing "War" since then that undoubtedly took out MANY families and lowered the population numbers in general.
re: 2. There are more teachers than the few main ones, and some as yet un-named classes.
Each year there are 2 more classes added to the students' load, or they focus on exams. Here's a neat reference from the Lexicon that sort of does some of what you've done here with JKR's info:

I agree 100% about the time a good teacher spends preparing for class, and they typically only teach about 4-5 hours per day! Yes, I'm certain there are those that do more, but union restrictions, at least here where I am, keep teaching time very low. Still there is a
lot of extra time involved. It's in the neighborhood of 2 hours prep/tutor/help/grade per hour taught. So the core teachers at hogwarts, with 35 hours teaching time, would need 105 hours total time per week!
As for magic, timeturners, etc helping - I would think that would burn them out quickly - look what it did to Hermione.
Agreed, there are other teachers and classes, but she never breaks one teacher per class, that I can recall. The courses from the first year never change, until year five. At least 2 more are added in year 3, out of at least 5 choices (I had forgotten Ancient Runes! Thanks for the lexicon references!) I think I remember that they get to drop some next year, but these are mandatory for the first year, and that's as far as I took it for now. Hopefully, by the time James and crew are in 6th/7th year, we'll have the last two books for reference.
Astronomy in daylight is for the theory only. The vast majority of the practical astronomy they do has to be near dusk or dawn, and there are at least 4 houses*5 years or 20 hours needed per class hour credit. When I wrote the schedule for astronomy, I used only the block of hours between 2000 and 2400, assuming that the actual observation times would vary with the topic/time of year/weather. That left me one hour per week I needed to put during daylight. But covering theory during that period corresponds to my real world classes, so I felt it was all right.
